Use sf function st_layers instead of gdalUtils::ogrinfo #281

Based on coding club experience, the chunk code in https://github.com/inbo/tutorials/blob/15139e78d13b6c0a109b28361f4cd0412e2401f3/content/tutorials/spatial_standards_vector/index.Rmd#L125-L127 should be replaced by the more intuitive function st_layers("sac.gpkg"), I think. What do you think @florisvdh ?
