I always find it bad form to have that stuff inside the options of a select. If we don’t need this text at all then we should remove.

I see your point but having a blank dropdown just seems weird. Oh well, not a huge deal.

Unless there's a reason we want to encourage the user to have a certain zone type selected by default, I think the prompt text should appear as the first list item in the DD menu.
Im going to veto prompt text in any drop down. I really think its bad ux - each user must select a scene type and text type in order to surface the appropriate after effects template and creating the corresponding assets.
