chore: expo 50 lint and Java fixes

Description

• Fixes lint scripts
• Upgrades to JDK 17 for Android building
• Small enhancement to Document Scanner example screen to preview the first image
• Updates docs to reference ExampleApp dir instead of InfiniteRedAI
