About Manubot: I know Manubot is an option, but I feel too little added value. I would be open to vote on this

By added value, do you mean compared to GH markdown + GH pages? I would agree, I think Manubot may introduce too much extra complexity for a few bonuses. I have no experience with Manubot though, I have only read the doc. It could be useful in a later stage though, e.g. if we want a clean, legit-looking manuscript to show before publication, or as a communication tool if we want to catch the attention of its OS user base.

I think Theo is right, I feel it makes sense to do at a later stage.
