Data: Direct the datasets/ symlink to /data/covid-ancillary-data rather than /data #7

At the moment users see this: image It would be more descriptive if:

  1. datasets/ symlink in the user's homespace pointed at /data/covid-ancillary-data/
  2. /data/data/ recursive symlink was removed (if possible).
  3. Perhaps add a share/ symlink to the homespace that points at /data/share/

This is non-urgent as everything still works, it's just less obvious than it could be. I'm aware that it might also be non-trivial to solve.
