add alignment option to appendBitmapText and add details to readme #55

The appendBitmapText option was added under this PR but the details were never added to Documentation.md. Add these details to the readme and add additional "alignment" and "bothScale" options to it.

@dnlowman Don't see any issues with this change, however unable to test it... okay to merge?
