It needs to also allow disabling the encoder altogether, if you wanted to write stuff raw, it should just allow that. Maybe you know the format well my nudging seems overly nannying or you have debugging reasons to exclude the encoder. Same holds true for the stabilizer but that operation extremely lossy already and only kicks in during convert.
