Collect a documentation page to showcase how CoFI has been used by the community.

For each example, we collect a link to the notebook + a link to a thumbnail image + a one-sentence description

Partially completed through the creation of https://github.com/inlab-geo/cofi-gallery. Some utilities have been implemented (including creating rst files) there. We will wait until there is an actual example to integrate that into our documentation as another submodule.
