Update Conway genesis files #558

Using https://github.com/input-output-hk/cardano-ledger/blob/065f467ab1827549af051a43cb0677cbe7b81d51/eras/conway/impl/test/data/conway-genesis.json

Note that I updated the file everywhere, let me know if some Conway genesis files should stay as before.
