Add detailed configuration info to docs #86

Currently we have an example configuration file, which is great, but it would be nice to format that into the docs so a canonical list of configuration items is more readable. Could be similar in style to https://nncli.org/configuration.html

An example configuration file can then be shorter, more like the one in the readme currently.
