add `docs/images/set*.png` files

• docs: add "docs/images/set_*.png" files, to be independent from Yunjun's deprecated personal website on wordpress.

• docs: remove "docs/logo.pptx" from the repo, as it's not used anywhere, into "insarlab/design-docs" repo.

• README:

  • update image links to docs/images/*.png
  • simplify the reference style of Yunjun et al. (2022), to be consistent with mintpy style.

• setup/pyproject: update Yunjun's email from Gmail to Outlook.
