Add function to update `fmt_fn` after the ARD has been created #253

In some function in cardx, we don't have fmt_fn arguments in the ard_*() function. It would be nice to have a function to easily/consistently update the formatting functions.

Maybe stat_label too?

Not a priority , but we're on board to make this happen in the future.
