Updates composer file to work with latest version of monolog #186

psr/log is just an interface for logging. In order to work with the latest version of monolog, my set of packages needs to work with ^2.0 || ^3.0. I am upgrading my app to work with php 8.2 and this is a blocker for my work.

Hi @thestalnakergroup, unfortunately I don't work on these SDK's anymore. I sent a note over to the team responsible for this but I can't guarantee anything for you. It would probably be quicker for you to use your fork if time is a concern ☹️
