Update references to Rafiki.Money in YAML files #514

Outside of the user docs, there are a few YAML files within Open Payments that reference the old Rafiki.Money and URL. These files need to be updated with the new Interledger test network/Interledger wallet name and URL (https://wallet.interledger-test.dev/).
