feat(backend): improve ilp connector logs

changes primarily consist of

• adding logs where there are errors to capture the context
• adding context to existing logs
• added some debug/trace logs
• updated level of some existing logs

Context

The connector services already follows a similar pattern as Open Payments does for error handling with the createIncomingErrorHandlerMiddleware which catches all errors and logs and handles them appropriately.
