Look at canvas order and making sure manifests follow same viewing experience as BookReader #35

Following the basic work in #9, we should verify that for books with frontmatter, cover images, etc., our IIIF manifests are following the presentation order and logic that's present in the IA bookreader.

So doing the investigating for #41 confirms that this is working as desired for v3 manifest, though v2 manifests use a different book reader URL and thus can have some unexpected canvases; we've decided that going back to fix the v2 canvas issue is out of scope for this current project, and that preference is for using v3.
