Incompatible Docker version #1398

Currently docker >25 and compose >2.24 seem to cause issues with networking/DNS.

[x] update documentation to pin installation to versions below the troublesome ones for now: https://github.com/internetstandards/Internet.nl/pull/1399
[x] resolve issues with newer docker versions
[x] resolve issues with newer compose versions
