It makes clearer that there are different types of custom fields. "Optional metadata' are custom fields that are built into InvenioRDM and can be turned on. These are introduced first in a new section, since we want to encourage people to use them instead of making their own thing.
Next comes the fully custom fields section, which I've simplified a bit. I point people to the How-to (which I haven't updated) if they want to do things like overriding templates.
I've gone through both sections and tested on v12dev2 and updated screenshots and the text.
