opensearch: Upgrade to bitnami chart version 1.0.0

Description

I saw that bitnami/opensearch had just released their first stable version, so I thought we ought to upgrade to that! There are some breaking changes, but I think it does not affect us. I have tested it, and it seems to work like the previous version.
