Inventory items can already be organized through shelves, but using shelves for tagging purpose could quickly be stretching it beyond what it was designed for.
Tags could live on the item documents as an array of strings (thus coming to existence when one or more item has it, and disappearing when removed from the last item, contrary to shelves which need to be created/edited/deleted), and just be a way to filter through an inventory or a shelf.
I'm not sure that we need this, but that's a feature request we received, and now there is a place to discuss this possibility.
