[FR] Enable struclog/json logging format #3960

[X] I checked and didn't find similar feature request

Problem statement

Currently, logs are in plain text. That requires manual settings for log-parsing with the ELK stack or similar products.

Suggested solution

Switch to or give the option to switch to struclog as a format.

Describe alternatives you've considered

Custom settings file - would not encourage that.

Examples of other systems

Authentik, Nextcloud
