Add PHP 8.1 to Server Requirements for Self-Host Installation #72

The composer.json shipped with Invoice Ninja 5.5 requires PHP 8.1 due to changes in invoiceninja/invoiceninja@c2ba8fa234 and invoiceninja/invoiceninja@865bb009a. This PR updates the dependencies in the Server Requirements section of the Self-Hosted installation docs to reflect this.

Thanks for this. I'll take a look into this as we'll probably want to show the requirements for >= 5.5.x and also <= 5.4.x so we can cover all users.
