Create a notebook to collect metrics about datasets that have been published as a result of these workshops #138

@sformel-usgs @albenson-usgs do you all know of other datasets that have been published as a result of the workshop? Below is my list:

I would like to do something similar to the mbon_stats function where we can gather download statistics about datasets that have been shared to OBIS / GBIF. It would be great to have a summary of the impact of these workshops in publishing data.
