Adding envs #5

closes #3 using one environment file. I think this is a simpler solution for now.

Takes mybinder about 20 mins to build and deploy initially [1]. Can't get RStudio to work w/ this env [2], keep getting 500: Internal Server Error.

ToDo:

[x] Double check all needed packages are in environment file.
[x] Get RStudio through mybinder to work w/ this env.
[ ] Provide a starting Python and R notebook?
[ ] Make build/deploy time shorter. See this thread.

So, RStudio works if we don't specify the r-base version. See this environment, which deploys this RStudio in mybinder.

However, when we update the environment.yml to specify additional packages and a specific python version, the RStudio functionality doesn't work:

Next to try:

remove python version number...
