I think it is a good idea to add a cookbook example demonstrating use of the finalize PEP. It can go over the JSON structure and explain how to use it. It also serves as a good example for the JSON microservices.
Perhaps add some reference to the database operation which it replaces, detailed in irods/irods#6385. Could provide some examples for transitioning. Also could include pep_resource_modified_* examples as an alternative.
