Would also like to note that one cannot sort on tags.
Assigning a priority (e.g. low, medium, high) to issues would be a very helpful feature.

+1 just do it. Maybe add the ability to have a tag that has multiple values, and only one of them can be present on any issue. Maybe do it some other way. But this has been requested in the first half of the last decade.
We are forced to migrate from gitlab and sorely miss this feature.
Either gitlab solution can be copied (sequence of selected labels with sort order and filtering)
Or just another version of labels can be added with order defined.

From you screenshot it looks like it does not work at all :)
Issues are not order by priority - Priority Very High is not at the top (or bottom) but in the middle
A possible workaround is the projects. A project board can be used to order the issues: cards in a column can be re-ordered. Just create a special project using "Bug triage" template and use it to assign relative priority to the issues via their places in the "priority" column.
u do have a point , can't get all priorities in one list, can't sort on label, at least one can get a list per priority by clicking on the label. For High Priority :

Priorities used to be an Issues feature. GitHub removed them in early 2011. So they should probably close this issue as Won't Fix, right?

I used to use a plain text 'todo' file to keep track of bug/todo issues.
I tried using your issue tracking system.
I find myself migrating back to the old plain text todo file - just because its so easy to regroup related issues (related by my wanting to handle them together) and grabbing a few and moving them to the top of my todo list.
If this IS possible with your issue tracking software, then please consider this a request to make the feature more accessible.
