I think it would be wise to explore GraphQL for data.gov.it.
I am no expert in GraphQL, but from what I have seen it offers a lot more flexibility when it comes to data exposure for APIs.
My expectation is that a project like dati.gov.it will end up with tons of endpoints and the team behind it will soon find itself struggling with maintenance against all the request for data.
Having GraphQL would provide more flexibility to the community with less burden on the central team.
There will certainly be a learning curve for end users who have never used GraphQL, but in the long run I think this would be a sensible choice.
