Yes, that's a feature of the desktop app (see "Browser games offline" on this page)
I did so and it seemed to work well, except i encountered a game-breaking bug in the first levels, which i don't encounter if i simply play the game in Firefox.
Seems like this could be either a bug in Ghost Party (does it run well in Chrome?), a bug or limitation in the app (but I'd need more details), or simply the Chrome version the app ships being too old (it ships Chrome 61 right now).

I am on Linux (Mx Linux Patito Feo) and wanted to play a game through the itch app. On the game page (linked here), the game was only available through the web-brower or to download for windows, although there was a button to install the game in the bottom of the windows ("Installer" means "Install" in french).
I was curious and pressed the button and was prompted with this window in which i was able to download the HTML5 build of the game. I did so and it seemed to work well, except i encountered a game-breaking bug in the first levels, which i don't encounter if i simply play the game in Firefox.
So i do'nt know at all where it comes from, if i should be able to download the HTML5 build at all, or if it's because i'm on Linux, or because of the supposedly built in HTML5 player which isn't up to date or something... but this is problematic nonetheless.
