I’m opening this issue so that we can share recipes of pancakes that are eggless, including alternatives with no banana and alternatives to oat flour. 👩‍🍳 I would also suggest playing around with some seasonal fruits when making these recipes. 🍓 🍏 🍒 Please leave a comment here letting us know whether the new adaption worked or not. Sweet Potato Pancakes Recipe

Prep time: 10 min
Cook time: 15 min
Total time: 25 min
Vegan
Harvard plate: vegetables, and oil.
Baby-Led Weaning or family: BLW

Ingredients

[ ] ⅓ cup roasted sweet potato
[ ] ¼ cup whole wheat flour
[ ] 1 tbsp ground flax seed
[ ] ½ tsp cinnamon
[ ] ½ tsp baking powder
[ ] 1 tbsp oil (I used avocado oil)
[ ] 2 tbsp milk of choice (whole, soy, oat etc)

Instructions

[ ] Place cooled sweet potato in a medium mixing bowl and mash with a fork. Add remaining ingredients and stir with a wooden spoon until just combined. *I'm excited about how thick this batter is going to be.
[ ] Heat a large skillet with cooking spray over medium low heat. Once hot, wet a tablespoon measure and scoop out a heaping tablespoon of batter at a time to form mini pancakes. Flatten with wet fingers to help them spread.
[ ] Cook for about 2 minutes per side, flipping once pancake is set and golden brown. Repeat with remaining pancakes. Slice into strips or cut into pieces for babies who have the pincer grasp (8+ months).

Spinach Chickpea Pancakes (Green Pancakes! 🟢)

Prep time: 10 min
Cook time: 15 min
Total time: 25 min
Harvard plate: protein, vegetable and oil.
Baby-Led Weaning or family: BLW

Ingredients

[ ] 1 ½ cup (180g) chickpea flour
[ ] 1 teaspoon baking powder
[ ] ½ teaspoon baking soda
[ ] A pinch of salt (skip this step)
[ ] 3 1/3 cup (100g) fresh baby spinach
[ ] 1 cup (240 ml) plant-based milk (they used oat milk)
[ ] 1 large egg (Replace e.g. 1 tbsp. chia seeds + 3 tbsp. water)
[ ] 2 Tablespoon extra virgin olive oil + extra for cooking

Instructions

[ ] In a medium size bowl, combine chickpea flour with baking powder and baking soda.
[ ] In a food processor, pulse spinach together with a little bit of milk until completely dissolved. Pour in the egg (chia seeds), remaining milk, olive oil and mix. Finally add the chickpea flour mixture and blend again for about 30 seconds, until well-combined. Set aside for 10 minutes.
[ ] Heat vegetable oil a large skillet over low-medium heat*, and once hot add 2 Tablespoons of batter for each pancake. Cook 1 to 2 minutes on each side; then place the cooked pancakes onto a plate covered with foil to keep warm. Repeat with the remaining batter, adding more oil to the skillet as needed

This is a good point because to be fair, no one said mid afternoon snack or breakfast pancakes had to be sweet, they can totally be savory!

Chickpea Pancakes 🟡

Prep time: 10 min Cook time: 15 min Harvard plate: grains, vegetable and oil. Baby-Led Weaning or family: BLW

INGREDIENTS

[ ] 1 cup (120g) Chickpea Flour
[ ] 1 1/2 cups 375ml Water
[ ] 2 tbsp Olive Oil
[ ] 1 Carrot, finely grated
[ ] 1/4 Red Capsicum (bell pepper), finely chopped
[ ] 1 Spring Onion, finely chopped
[ ] 1/4 tsp Turmeric
[ ] 1/4 tsp Cumin seeds
[ ] 2 tbsp Chopped Coriander (cilantro)

INSTRUCTIONS

[ ] In a mixing bowl add the chickpea flour and then slowly add the water, whisking continually, to form a smooth, lump-free batter. Set aside.
[ ] In a frying pan, heat 1/2 tbsp of the oil over a medium-high heat. Add the carrot, pepper, onion, turmeric and cumin seeds. Reduce the heat to medium-low and cook until softened (around 4-5 mins)
[ ] Add the carrot mixture to the chickpea batter along with the chopped coriander and salt (if using). Stir until fully combined.
[ ] Heat a non stick frying pan over a medium-high heat. When hot add a drizzle of the olive oil (or alternatively use a spray oil). Add a tablespoon of the batter to the pan and use the back of your spoon to spread it out a little (to make them thinner) Repeat to fill the pan.
[ ] Cook for around 2 minutes on each side (this will vary depending on the pan, heat and how thin your pancake is). You want to look for bubbles forming (see above picture) and your pancakes should be able to be flipped easily.
[ ] Remove pancakes from the pan and repeat with the remaining mixture.

Lentil Spinach Pancake 🟠

Prep time: 5 min
Cook time: 10 min
Soaking time: 12 hours
Harvard plate: vegetable and oil.
Baby-Led Weaning or family: BLW

INGREDIENTS

[ ] 180g (1 cup) Red Split Lentils
[ ] 1/3 cup Water
[ ] 1 Garlic Clove, minced
[ ] 1 Carrot, grated
[ ] 1/4 tsp Ground Cumin
[ ] 1/2 tsp Smoked Paprika
[ ] 2 handfuls Baby Spinach (finely chopped into ribbons)
[ ] 2 tbsp Fresh Lemon Juice
[ ] 1/4 tsp Salt*
[ ] 1 tbsp Oil (for frying)

INSTRUCTIONS

[ ] Add the lentils to mixing bowl and cover with water. Allow to soak overnight.
[ ] Drain the lentils and add to a blender / food processor along with the water. Blend until you have a smooth batter. You may find you need more water, add as needed. (See process shots for batter image)
[ ] In a frying pan, heat 1/2 tbsp of the oil over a medium-high heat. Add the carrot, garlic, smoked paprika, cumin and spinach, reduce the heat to medium-low and cook until softened (around 4-5 mins).
[ ] In a large mixing bowl mix together the lentil batter along with the sauteed vegetables and the lemon juice.
[ ] Heat a non stick frying pan over a medium-high heat. When hot add a drizzle of oil (or alternatively use a spray oil). Add a tablespoon of the batter to the pan and use the back of your spoon to spread it out a little (to make them thinner) Repeat to fill the pan.
[ ] Cook for around 2 minutes on each side (this will vary depending on the pan, heat and how thin your pancake is). You want to look for bubbles forming and your pancakes should be able to be flipped easily.
[ ] Remove pancakes from the pan and repeat with the remaining mixture. Serve
