Special issue created for us to share some delectable recipes for babies (and potentially toddlers as well?) 🍽️

Quinoa with Mediterranean Vegetables

Ingredients

Instructions

@iteles edit: This looks awesome, we should try this with roasted veggies too, but this is a nice, quick way to do it. Adding a dollop of hummus should help with the protein intake too in addition to the quinoa.

Piccolo Cherry Tomato, Squash & Spinach Orzo

Ingredients

Instructions

@iteles edit: We need to add a proviso here that this recipe is only for babies over 12 months due to the nitrates in the spinach. The alternative is to boil the spinach separately beforehand and discard the water 👍 We would want to either add beans to this sauce (before or after blending) or serve with a legume pasta to add a protein.

Zucchini Muffins

INGREDIENTS

INSTRUCTIONS

@iteles edit: I would suggest omitting the sultanas altogether as dried fruit are very high in sugar and probably totally unnecessary at this age! The applesauce should add enough sweetness 👍

@Stephanymtr These look great, thank you for the research!

I've added some edits to the bottom of the comments as that's the easiest way to keep recipes and comments together 👍

I think these pataniscas de legumes look like a great thing for us to try making next week: https://github.com/iteles/blw-baby/issues/5#issuecomment-1003323051

Edit: Baby was not a fan, I had to disguise these in tomato sauce and serve with pasta every time. Maybe a bit too dry?

Pasteis de Lentilhas e cogumelos

These are a recipe from a friend in my BLW baby group:

👩🏻‍🍳 Cozer as lentilhas e deixar escorrer a água. 👩🏻‍🍳 Saltear a cebola junto com os cogumelos e deixar escorrer o molho [Reserve this molho, it's awesome to make pasta sauces with!]

Should look something like this (but less dry 😅): image

Lasanha vegetarian

Note: This calls for Fresh pasta sheets and we have uncooked ones, so we'd need to google to see how to adapt the recipe for that.

Also note: We have plenty of frozen tomato sauce but once we thaw this, because it was already cooked in its making, there won't be any transformation to it, so it can't be re-frozen. Same with the oat bechamel. We'd have to make these fresh.

Consider changing out some of the oat bechamel for molho de couve flor: https://comidadebebe.pt/receitas/segundo-prato/molho-de-couve-flor/

WHITE BEAN ALFREDO PASTA Ingredients 3 Tbsp olive oil 3 garlic cloves, sliced thinly 1/4 tsp dried oregano 1/4 tsp salt 1/2 cup raw cashews, preferably soaked for 30 minutes 1 15 oz can white beans, drained and rinsed 2 tsp nutritional yeast 1/2 cup reserved pasta water, or vegetable broth 12 oz cooked small pasta, like elbows or shells 1/2 small lemon, juiced Instructions Heat the olive oil in a small saucepan and add the garlic. Cook for 30 seconds, stirring the entire time, taking care not to burn. Remove and set aside. Add the oregano, salt, cashews, white beans, nutritional yeast and cooked garlic with oil into a blender and pulse 10 times until just broken down. Add in 1/3 cup of the reserved pasta water and puree until creamy and smooth. If the sauce is too thick, add in more pasta water, a tablespoon at a time. Add the bean sauce to the cooked pasta along with the lemon juice and toss to combine. Season to taste, adding more salt/pepper as desired. Thin as needed with reserved pasta water, this pasta will thicken as it sits!

** we could def replace the pasta for lentil/veggie pasta for a higher nutritional value
