Currently the project version must be set in each CMakeLIsts.txt file that defines a project file.
In addition the version of the MATLAB toolbox project file must also be changed manually.
On the one side it is tedious to update all files manually, on the side it is error prone, since one file is easily overlooked.

Define the project version number in one place and let CMake do the rest
