I enjoyed reading your article. I too have a Raspberry Pi5 8gig. I have issues with Bookworm. I actually prefer VNC and the old desktop. The other big problem I am having is I am attempting to interface a DHT24 Temp and Humidity sensor to the GPIO pins, something I have done on my RPi4 with no problems. Bookworm is too restrictive. I can only use PIP in an restricted environment. Much of the old software I once used is unavailable or must be modified to work. I would have considered trying the OS that is powering my Pi4 but I am using the PCi interface. I really with they would fix Bookworm and give us the option to make is as restrictive as we want to make it.
