Update README with SCT v6.2 #35

This PR updates README.md with instructions on how to run the model using SCT v6.2 or higher.

The original instructions on how to run the model using run_inference_single_subject.py (i.e., with SCT < v6.2) were moved into packaging/README.md.

The PR also updates the rootlets suffix to label-rootlets_dseg to be compatible with our new conventions.
