Changed GIN_MODE and wharf-web image tag

GIN_MODE is now set to release when isProduction is enabled, which hides a lot of the debug logs which can somtimes contain confidential info.

There was a new release of the wharf-web as well. So I'm bumping that.

This gin mode change should be applied across all the wharf-providers aswell.

Good note! I've added them to the providers deployments as well
