I unlocked a device with it successfully, but will it stay after:

Software update (OTA) Restore (on device)

Software update (itunes) Restore (recovery/itunes)

Or is it like the mdm has never been on the device?

A software update shouldn't do anything. Anytime I need to activate the device (after a factory reset), the process needs to be done again.
