In HDRP the shader changes the textures on the x instead of the y, similar to at the very end of your youtube video. Unfortunately like in the video, regenerating the mesh does not fix the issue.
My apologies. Made the mistake of simply downloading only the shadergraph to quick test it. If you download the whole repo and /or follow the tutorial like a normal person, it works on the y axis just fine.
