update syntax highlighting

There are a few places where Jacob's syntax highlighting is inconsistent:

• Icons - these are currently in block code with no highlighting.
• Code blocks - these are a little more complicated, because they inconsistently have double codeblocks around them.

I suspect for the codeblocks, we might want to remove the inner ``jsx</code> from them withremoveMarkdownCodeblocks`, but I'm not sure what type of ripple effects this might have.

Just wanted to start down the path of improving this.
