At the moment when I sample spatial data from rasters I sample just using the plot centroid. This is probably okay for figuring out which plots are of interest but introduces edge effects when plots are close to the edge of a cell and makes no sense when thinking about carbon plots (which often have irregular shapes). So, more sensible averaging should be written for later analysis
