If the optional field "Email Subject" is contained within the Config tab of the analytics spreadsheet, it will be appended to the subject line of the email. This allows Evernote users to easily add folders & tags, as well as allowing those not using Evernote to append something of their choosing (or nothing).

Looks like we crossed on this one. I pushed an update a little while ago that basically does what you suggest, but allows the entire subject line to be customized for each message, and implements keyword substitution on values from the data. See the last section of the updated README for details.
