Hey, ive looked into the renaming of the package and have a fix ready for that. I also added a few improvements. But while the renaming issue is fixed the building of the new image wont start the gameserver fully. The image is having basically the same issue as you are having. Ive looked into that now over 2 hours but the breakthrough is missing sorry. When i have more time on hand i will fix that.
An easy fix for you is just delete your local image for the gameserver and use "docker pull jammsen/the-forest-dedicated-server" then you will get the 10 month old build which is working just fine.
Ive shortened your 2nd comment with the collapse feature, for better overview.
Will the game server start and work properly now on Ubuntu?
Same issue here, but my server work fine for few days. Today got the
(Filename: Line: 376)
OnLevelWasLoaded was found on DeathMPTut
This message has been deprecated and will be removed in a later version of Unity.
Add a delegate to SceneManager.sceneLoaded instead to get notifications after scene loading has completed
Look like problam it's happend with the theforest folder. I remove the theforest folder and started a new container used old steamcmd folder. That will start working a new game server, then i put the old theforest into the new container Still got same issue, hope that can help a bit.
Sorry guys, took me some time, but i think igot it fixed (b5d8a4e55d4020129e5a5c9e5a38c66b0afc7397). According to some really extensive testing, everything should work now, but please read the updated readme and try it out and give me feedback.

So it works nice!
I still dont get why you build the server yourself,, when i just published a new image on docker hub which you just could pull, but okay i guess, build it yourself and get the same thing.
