Added a skeleton structure for the project files #5

Some skeleton areas that we can use to organize different aspects of the code, scripts, notebooks we need to produce

Hi all, it would be good if we can agree on a structure for the project files. This will make it a lot easier to deal with git conflicts. Could you please take a look and if you agree can you approve the PR?
