I'm fairly new to Homekit, but found your script quite helpful. I am however battling to see the accessories in Homekit. I suspect my config.json is not correct, and after I tried yours I also tried another (attached). So homebridge-mqtt is successfully installed, no errors. I'm using ESPEasy, which works fine on Node-RED UI, with Mosquitto as broker on the same PI.
