Switch from `helm-docs` and manual `values.schema.json` to `bitnami-labs/readme-generator-for-helm` #65

https://github.com/bitnami-labs/readme-generator-for-helm provides a way to generate values.schema.json and README on the fly from values.yaml. We should explore if this would be useful for our chart or not.
