Hey @jasonjgardner, To help with this, you can convert specular maps used by optifine into MER files (Except for Emissive properties) by inverting the red channel of the specular, and then putting the blue channel into where the red channel would be, the green to the green, and the inverted red into the blue channel. This can be done in Substance Designer (I think its substance designer) As for the textures that have a different name, you can do those by hand and there are also converters from java to bedrock.
The following missing textures from issue #52 do not seem to be used in Bedrock Minecraft:
