Bump jackson from 1.x to 2.x: notes, changelog
Bump target JDK from 1.6 to 1.8

Jackson 2.x supports a minimum JDK7, however, out of of the box, JDK7 does not support TLSv1.2 without additional parameters. Since Maven Central discontinued support for anything lower than that I elected to set the target JDK to 1.8.
