Bump Wildfly default version (including related ones) and MP spec default version #279

The testsuite needs to support the latest MP specs (6.1) and WildFly by default.

Passing job ID: eap-8.x-microprofile-simple-face, run: 88 (failures don't depend on the changes here and must be investigated)
