It would be great (there is currently no solution that does the same, so I
don't expect it to be available right away) if it were possible to call-in
to a meeting over a hard-line (PSTN) or a softphone (VoIP). SIP is the
standard to make that possible.

It possibly could be done using a small client on the side that logs into a
specified meeting and forwards all audio/video it receives and vice versa
(audio only should do it for now, but a grid-view of video would also be
really nice). Once you allow simple connections and transcoding (ffmpeg can
do that), the rest (authentication and forwarding) can be handled by
Asterisk or another SIP solution.
