Ingredients

1 tbsp coconut oil
1 onion, chopped
2 garlic cloves, minced
2 tsp ginger, minger
1 tbsp garam masala
1 tsp cumin
2 tbsp tomato purée
1 tbsp water
1 x 400g can coconut milk
240ml chicken stock
500g chicken thighs
100g spinach
Fresh coriander, chopped for topping
Seasoning, to taste
