Prawn and brie pasta #129

Ingredients

Method

  1. Start cooking the Rigatoni pasta.
  2. Fry of some shallots and garlic in olive oil.
  3. Add the tomatoes, brie, and optional spinach and chilis.
  4. Allow to cook of for 1-2 minutes.
  5. Add the prawns and cook until almost pink.
  6. Pour in the cream and mix together with a pinch of nutmeg.
  7. Loosen up the sauce with some of the pasta water before draining the pasta.
  8. Drain the pasta and combine with the other ingredients.
  9. Season to taste.
  10. Serve topped with parmesan and parsley.

  1. Cube Brie and combine with next 7 ingredients in a bowl. Cover and let stand about 1 hour.
  2. Cook pasta in boiling salted water according to package directions. Two minutes before pasta is al dente, add shrimp. Cook 2 minutes or until shrimp are done.
  3. Drain pasta and shrimp, and immediately toss with Brie mixture. Serve immediately with fresh Parmesan

Method

  1. Cook the linguine according to instructions. Drain and set aside.
  2. Gently heat the milk in a large saucepan, and add the Mascarpone and Dolcelatte. Stir until the cheese melts and keep on a low heat.
  3. Heat the oil in a large frying pan. Add the prawns, tomatoes and chillies, and cook over a high heat for 1 minute.
  4. Add the drained linguine, cheese sauce, Mozzarella Minis and spinach.
  5. Stir well, check seasoning and serve immediately.
