Bosnian Stuffed Peppers (Punjene Paprike) #277

Punjena paprika ([pûɲenaː pǎprika]) (lit. stuffed pepper) is a Croatian dish made of peppers, stuffed with a mix of meat and rice in tomato sauce, the ingredients consisting of green or red capsicums, eggs, spices, salt, tomato, minced meat and rice. It’s popular in Balkans.

Ingredients

For the sauce

Method

  1. Wash and dry peppers. Cut open the top and remove all the seeds and membranes. Set aside.
  2. Cook the rice halfway (about 5 minutes) and strain. Set aside.
  3. Finely chop vegetables.
  4. Place ground beef in a medium bowl and sprinkle with all the spices.
  5. Add all vegetables, rice, egg and parsley and mix into a compact mass.
  6. Stuff each pepper and set on a plate next to the stove.
  7. Heat 3 tbsp of cooking oil in a frying pan. Lightly brown peppers on each side (just until fragrant, remove from the pan and place back on the plate.
  8. Pour the oil from frying into a cooking pot. You will make the sauce now.
  9. Lightly heat the oil, add 2 tbsp flour and stir gently until smooth.
  10. Add ground paprika and salt and stir for about 1 minute. Don’t let it burn.
  11. Add tomato puree and water. Stir and let it boil.
  12. When the sauce starts boiling, place all the peppers inside. Turn the temperature down to medium and simmer for about 45-50 minutes in a half covered pot.

Notes

  1. Sauce will reduce during the cooking and will become thicker.
  2. Serve with a side of mashed potatoes #280 or just with bread.

Method:

  1. Hollow out petioles with washed and dried peppers
  2. In a large bowl put the meat, add the rice and stir the mixture
  3. Add sweet ground pepper to the mix and mix it well
  4. Slice the smoked pancetta and insert it into the mixture and mix
  5. Clean and slice garlic, followed by onions
  6. Mix the whole mixture well
  7. Add the egg to the mixture and stir to pair the egg with the rest of the mixture
  8. Salt and pepper to taste, stir, add parsley
  9. Mix everything well and fill the peppers
  10. If there is a mixture left, make balls/meatballs from it and cook together with the peppers
  11. Put oil on the bottom of the pan in which it will be cooked, and then stack the filled peppers on it
  12. Fry the peppers, add tomato and water sauce to cover the peppers
  13. When it boils, cook for 45 minutes
  14. Ten minutes before the end of cooking add to a little water melted starch flour
  15. Cook for 10 minutes so that the water in which the peppers were cooked thickens

Mashed potatoes:

  1. Peel potatoes and wash them
  2. Cut the potatoes into pieces and cook in the posseed water until tender
  3. When the potatoes are finished, strain it and crush it
  4. Add to the crushed potatoes on the leaves sliced butter and a little milk
  5. Mix everything well to get a thick creamy mashed potato
